Interested in starting a home food business? Why not try food preservation? Fresh fruits, vegetables, fish, seafood, and meats can easily be turned into products that can keep longer and thus be good for selling. There’s a primer that can help you choose what method and what food items you can work with.
Preservations is one of the oldest technologies man has adapted for survival. Food, if left in natural conditions, rots and spoil due to the action of enzymes and microorganisms. With the use of heat, acid, salt, and sugar, food preservation aims to control or stop these natural occurring processes so that food can last longer. With modern technology, preservation extends it’s objectives wherein the physical state of food, color, flavor, and nutritive properties are also preserved.
There are many ways of preserving and most are quite simple that they can be accomplished in one’s own home. Preservation of food is one way of cutting down on wastage and promoting self-reliance. The fundamental principle underpinning the method is basically the same. Create an environment not suitable for microbial growth. This simple means to remove or reduce moisture in the food, acidity, seal and protect, and keep it at temperature above or below the survival range of microbes.

CANNING
A process requiring the heating of food to a specific temperature and holding the food at that temperature for a specific length of time. The food is to be placed in a special glass container that can withstand the heating process and as a result, a vacuum, is created hermetically sealing the food within.

Applicable Foods:
·         Fruits, vegetables, meats, seafood, and some prepared food like jams and jellies.
Tools & Equipment:
·         Canning jars and lids with a sealing compound.
·         Stockpot or any deep metal pan or pressure cooker/autoclave with an accurate pressure gauge.

Type/Method:
·         Boiling water bath – filled and sealed jars are kept submerged under boiling water and processed for a given time. Maybe used to process high acid food.
·         Steam Pressure Canner – processes food under pressure at a temperature of 115 degrees centigrade, the only reliable method for low acid food.

Basic Guidelines:
1.    1.Fruits and vegetables that are mature and slightly under ripe are best for this method.
2.    2.Food less than 4.5 pH is best for boiling water baths. If the pH is more than this, an acid may be added in the form of lemon juice or vinegar.
3.    3.When processing at higher altitudes, processing time by five minutes for every additional 1,000 feet.
4.    4.Follow tested recipes and avoid modification in the processing method.

Living Room
            Assign a place for everything a small console for TV remote controls or a bin for current magazines (toss out anything older than three months).
            Schedule 10 minutes every evening to fix the pillows fold the throw, and put things back in order.
            Enlist the help of reliable cleaning tools like vacuum cleaners that are ergonomically designed and are able to clean anything on any surface.

Kitchen
            Schedule a day each week for eating leftovers or getting rid of uneaten food.
            Clean as you go, soak pans immediately after use, wipe down the kitchen counter, and clean the sink after washing the dishes.

Bedroom
            Make the bed every morning and set the tone for a clean, clutter free day.
            Have a catchall basket for stuff you want to deal with later when you have more time, books, toys, clothes and etc.

Bathroom
            Fill half of a plastic bag with equal parts vinegar and water, and slip it over the showerhead.Secure with a rubber band or string. Leave for several hours and rinse the showerhead well before using it again.
            Use vertical space to share excess bathroom supplies such as toilet paper. Hang baskets on the towel bar using S-hooks.

Make sure your business is legitimate before you begin any production, transaction or sale. Here is a checklist of things you need to do, offices you need to visit, and papers you need to secure.

STEPS 1
REGISTER THE BUSINESS
Get a certificate of registration depending on the structure of your proposed business. Go to the following offices:
-Department of Trade and industry DTI for single proprietorship – get a certificate of registration of business name.
-Securities and Exchange Commission (SEC) for partnership and cooperations –get a certificate of registration.
-Cooperative Development Authority (CDA) for cooperatives – get a certificate of registration.

STEP 2
SECURE PERMITS
Visit the following offices to get a clearance and/or permit to operate.
-Homeowners Association – Get a clearance if your business will operate villages or subdivisions.
-Barangay Hall – Get a barangay clearance.
-Local Government Unit (LGU) Secure a business permit from a municipal or city hall.
-Bureau of Internal Revenue (BIR) apply for a business taxpayers identification number(TIN), register your books of account, register you POS and get an authority to print official receipts.

STEP 3
REGISTER YOUR EMPLOYEES
Register your employees at the following offices:
-Social Security System (SSS)
-Department of Labor and Employment (DOLE) If your business will employ 5 or more worker.
-Home Development Mutual Fund (HMDF) RA 7742 requires all SSS members earning at least Php 4,000 a month to be registered. HDMF administers the Pag-ibig Fund.
-Philippine Health Insurance Corp. (Phil-Health) RA 7875/RA 9241 requires all employers of government and private sectors and their employees to be registered.


STEP 4
CHECK IF YOU NEED OTHER PERMITS
Verify if you need special clearances/permits /licences from other governments institutions like those listed below, especially if the business is food related. Inquire with DTI.
-Food and Drugs Administration (FDA-DOH)
-National Meat Inspection Commission (NMIC-DA)
-Bureau of Animal Industry
-Bureau of Fisheries and Aquatic Resources
-National Food Authority
-Bureau of Plant Industry
